Lunch!

James went into work today because he did not get enough hours during the week.. stupid economy! So, today on this raining Saturday I have just been lounging around .. just me and Bella! It's 1:00 and I'm hungry.. So I whipped this up:



Look hard? It's NOT!! Took me a whole 12 mins. tops!

Its hard to tell you exact measurements because now I just add stuff and taste.. but I'll try my best... You need:

1 lb of shrimp
2 tablespoons of lemon juice
2 tablespoons of parsley
6 oz or so of pasta- use whatever you have
3 to 4 cloves of garlic
a dash of Cajun seasoning

Cook Pasta (go wash clothes or clean or something..come back in 4 to 5 minutes). Place butter, garlic, parsley and lemon juice in skillet cook for a few min. (to melt the butter and to get the flavor out of the garlic). Add shrimp. Add Cajun seasoning if you choose so..Not to MUCH! Cook shrimp until pink. Add Shrimp mixture to the pasta and your done! HOW EASY!!!

GREAT weekend!!!

Valentines Day was AWESOME!!! James and I had the best "first" Valentines Day ever.. Let me tell you what we did..
-James had to work Saturday (BOOOO!). I slept in and woke up to pee on the floor (thanks Bella!). After cleaning the floor on my hands and knees I decided we HAVE to send Bella to potty training school! Whatever money I get back from taxes I am sending Bella to school.. (great for me huh?).
- After cleaning up pee (yes I was SO MAD) Lauren and I went to go eat lunch.
Lauren and I went to Cypress Station Grill (YUMMMMMMMO!).
-After eating we ran to Target for me to get some wrapping paper for James' gift.... Okay going to Target is scary for me because I usually spend A LOT of money there... I had to be quick because Lauren was bringing home food to her fiance'.. SO I found a shirt for Bell, some cute things for Catherine and I (you wont know until Monday!!)... some wrapping paper... and 3 cute cards! We only shopped for 10 minutes and I seemed to find all of that atuff .. I'm awesome huh?
-Lauren took me home and I was on a cleaning rampage.. I cleaned the livivng room, the kitchen, our bed room, and the bathroom within an hour and half!
-James got home from work I gave him his scrap book I made..HE LOVED IT!!!

-Then we ran over to Best Buy to see if they had a game James wanted for PS3.
- After we got back I started making the BEST lasagna I have EVER had!! Seriously it is.. NO JOKE... Best lasagna I have ever paid for at a restaurant .. This recipe is not mine.. I got it from Pioneer Woman here is her recipe:

Here is the ingredients:
1. In a large skillet brown all meats and add garlic

2. At the same time boil the pasta (add the olive oil so they pasta does not stick). After the pasta is done put it on foal to sit for later use.

3. Mix cottage cheese (I used ricotta) with two beated eggs, 1/2 cup parmeasan cheese, basil, and parsley.

4. After meat is cooked add 2 cans of whole tomatoes and 2 cans of tomatoe pastse, salt, baisil, parsley and let simmer for 30 minutes.

5. After you are done simmer its time for the assembly line.. Place noodles on the bottom of pan..On top of noodles spred over a thin layer of ricotta mixture
On top of ricotta mixture spread a thin layer of mozzarellas cheese (I used the slices and shredded). On top of the cheese place meat mixture

Repeat process 1 more time. Your pan is going to be VERY full but look so yummy

6. Plop in the over for 20-30 min, on 350 and you have just made the BEST lasagna EVER!!!

I leave you with the best news ever.. James and I finally got our Blackberry's today!!!!
- We finalized our cake for the wedding, and I got our plane tickets for the honeymoon!!! GO ME!!!!!!!

I'm going to be so addicted!

Friday I am going to get a new phone. My contract is up and its time to upgrade.. I am going to be soooooo addicted! This is the new Blackberry Storm... I really wanted an Iphone but I have heard some bad stuff about it. Also, I would have to change to AT&T. I didn't really want to switch beacuse everyone in our family has Verizon. So here is going to be my new addiction....

YES!!!!

Yesterday I went with my girls to find bridesmaid dresses and I had a blast!!!

We found dresses and shoes!!!!!! Who would of ever thought? Not me! I am super excited.. Everything is coming together!

Recipe Thursday!

I made enchiladas the other night and they are soooo yummy I have to share with you! My Grandmother always makes these enchiladas and she is is such a great cook, so I always thought they would be VERY hard to make, but they are SO easy!

This is what you need:
1 lb of ground beef (I use turkey - its not so fattening)
1 package of taco seasoning
1 package of enchilada sauce mix
about a 1/2 of package of cheddar cheese ( I use 2%)
1 package of tortillas (I use carb balance)
1/2 onion (optional..but I think it tastes better with onion)

Here we go:
-Put the Oven on 350
-If you are using onion..Chop onion and cook in oil until tender
-Cook meat
-Add about 1/2 to 3/4 of the taco seasoning to the meat and 3/4 cup of water and simmer down until there is no water left - this is just for a little flavor (if you cooked onion add after meat is cooked and taco seasoning is not watery)
- At the same time as you cook the meat, read the enchilada sauce package and make the sauce.. You can buy it in a can, but it does not taste as good!
-Grab a baking pan and the tortillas
-Fill the tortillas with as much meat as you want and put a little cheese on the meat before you roll them. I am NO expert enchilada roller (is that word???).. Just roll them up and throw it in a pan.. its so good who cares what it looks like!!
-After you are done rolling them put all of the enchilada sauce on top and sprinkle a little bit of cheese.
- Bake for 30 min on 350 and THEY ARE SO YUMMY and SO EASY!!!! James asks me to make them at least once a week... Thanks Grandma ;)

New pillows...

Ok.. Catherine I can hear it now.. YOU ARE SUCH A NERD!!! Today was my day of cleaning and decorating! James is busy playing computer games, so Im taking pictures... I wanted to see how the new burgendy looked... Here are a few pictures... I photoshopped them.. I cant help it.. I LOVE to take pictures and play in PHOTO SHOP!!!!!!




Ok so I have only changed the pillows.. But what do you think? What other color goes with burgundy?
