recipies

This is for you Catherine... Some of my favorite recipes:

Mexican Lasagna
1 pd hamburger meat
1 chopped onion
1 can Rotel
2 cans ranch style beans
1 pkg taco seasoning
flour tortillas (quartered)
grated cheese

Brown the hamburger meat and onion, add taco seasoning, salt, and pepper. Stir in the beans and Rotel. Spray a casserole dish with non-stick spray. Layer in the dish the tortillas, meat mixture, and cheese. Continue layers until meat is gone or pan is full. (usually 2-3 layers) Bake at 350 20-30 minutes or until bubbly.



Crockpot Fajitas
3-4 pound boneless chuck roast (or roast of choice)...I only got one that was 2.5 pounds, and it was plenty
1 chopped onion
1 1/2 c. uncooked pinto beans
2 cans rotel
1 can cream of mushroom soup
1 small can green chilis
2 tsp salt
1 cup water

Layer in the above order in crockpot. DO NOT STIR! Cook on low 8-10 hours.
DO NOT STIR IT UNTIL IT IS FINISHED COOKING. Then, stir and shred meat while stirring. Meat should fall apart easily.

Serve wrapped in tortillas with cheese, sour cream, tomatoes, guacamole, or whatever you desire. :)


Honey Grilled Chicken
Serve on rice if desired.

• 1 teaspoon ground ginger
1 teaspoon garlic powder
• 1/3 cup reduced sodium soy sauce
• 1/3 cup orange juice
• 1/4 cup honey
• 1 green onion, chopped
• 4 medium boneless skinless chicken breast halves
 
In a large self-closing plastic bag, combine first six
ingredients; mix well. Place chicken in bag and seal
tightly. Turn bag gently to distribute marinade.
 
Refrigerate 15 minutes or up to 30 minutes for
stronger flavor. Turn bag occasionally.
 
Lightly grease grill rack. Preheat grill to medium
heat. Remove chicken from marinade; reserve the
marinade. 
 
Grill 6 to 8 minutes per side or until juices run
clear. Discard leftover marinade.
 
Nutritional Information includes total amount of
marinade. Actual absorbtion will be less and vary due
to marinade time and cooking times. Per Serving: 221
Calories; 2g Fat (6.3% calories from fat); trace
Saturated Fat; 29g Protein; 23g Carbohydrate; trace
Dietary Fiber; 68mg Cholesterol; 879mg Sodium.
Exchanges: 0 Grain(Starch); 4 Lean Meat; 1/2
Vegetable; 0 Fruit; 0 Fat; 1 Other Carbohydrates.

Birthday FUN

My birthday is going well.. Last night my dad took James and I to a restaurant called Zula. I wanted to go to a place that we have never gone before. It was a fancy restaurant in downtown. James and Dad had a great big steak and I had a really good chicken dish. After dinner they brought out champaigne with a hue sparkler.

After dinner we went to Spec's downtown. This is the only place in Houston that carries my favorite wine! I have never been to that Spec's before and its HUGE!!! We found my wine and the guy working there told us they only have a few more bottles and then they wont have it again for a while, so we bought 2 bottles!!!
The ones on the left are the bottles I am talking about. The wine is from Germany and it has to be imported. We also bought sour balls my favorite candy and James got some Parrot Bay. They bottle on the right is some wine the waiter recommended at dinner so we bought it to try with some steak!!! OHHH.. The best part..The packages in front is a wine sealer. Its so COOL!!! You put it on top of the bottle of wine and pump out the air to seal the bottle. So you dont have to drink a whole bottle and it wont go bad!! I have been looking for one of those everywhere and it was there. They place has some crazy foods to.. James and I saw candy necklace thongs for MEN!!! It was SOOOOO FUNNY!!!!!!

James also got me the best birthday cake ever...

This is an ice cream cake from Ritters.. MY FAVORITE PLACE EVER.. If you have not been there GO.. dont walk run there!!!! We ate it last night after dinner and it was amazing!!! James has made my birthday so special I am SOOOO LUCKY!!!!!!!!!!!!!!!!

This morning James and I were hungry so I made us some biscuits and James made some EGGS.. EWWWWWWWWW... I hate eggs but he loves them.



Great weekend so far! Tonight James and I are going to have birthday dinner with my Mom and Step Dad..Also, his parents are coming over!!! :)

EXCITING NEWS!!!

Last night was my last night to take blood thinner (I hope)!!! I am excited because that stuff make me feel bad!!! I am also scared beacuse I have read some scary things on line about people getting off the blood thinners. Some people said just days after they got off of it they had another blood clot so I'm scare about that....but....I'm just not going to think about it.. I'm off it for now.. Welcome me back to the world of cocktails and salad!!!!! Tomorrow night I'm going to ask James to take me somewhere to have a salad and I cant WAIT!!!
Also, Monday is my big 25th birthday!!!! I am not really going to do anything big this weekend but I'm so excited because I get to eat salad and have a cocktail! I am also excited to be sharing such an exciting time with James and my family! Plus we have Monday off.. What a great birthday present!!! :)

So not so exciting new...School Update:
My kids are still acting pretty well. Writers Workshop is still very hard right now because the kids do not know their letters or their letter sounds. I am still going to do it tho I just hope it works!
Today was our first fire drill and my kiddos did a great job! It seems like a have a great class.

2nd day

I am really excited about this year. I started Writers Workshop and Readers Workshop. Most of my kids seem like they don't even know what letters are but for some reason I am very excited about this year!!! My kids seems to be behaved and are ready to learn. I am sooo excited about this year.. I am giving it my all!!!

1st day

Today was a good day but boy am I exhausted!!! It was very hectic mostly because of the construction.
I didn't have criers yet, and the parents were great. We "tried" to practice lunch at 9:45 and that didn't happen because everyone in the school though that would be a good idea to price lunch then. Finally my kids ate lunch and we went to recess. I explained the rules to the kids and they went to play it was SO HOT!! We trucked back in side and it took forever ( Id say about 12 minutes..its goot to be a good 1/4 a mile). After lunch went by quick and soon it was time for larg group. The kids went to large group and it was time for them to go home. Since we are under construction the bus circle is short so we have to load buses in shifts. Well let me just tell you this isnt fun! I didnt leave school untill 5:00 when the last bus was loaded.

Over all my day was good kids were pretty well behaved it just so hot!!!!!

Best part of the day: You will only enjoy this if you are a teacher. I as standing in line with the kids waiting for lunch to start. One of Jessica's kids comes up to me and says "MY bubble is broke!!". So I show her how to put her "bubble" back in her mouth and tell her to get back in line. About 2 minutes later she comes back to me and says "Look it doesnt work". The little girl is trying to put a bubble in her mouth and looks so funny. I am so tired at this point I just start laughing.

Me VS. a Table

Last week I ran into a table in our crazy construction building. The table was laying on on its top and I ran into a leg! OUCH!!!!! When I did it I felt like I was going to throw up. I am still on blood thinners so I knew it wasn't going to be a pretty sight in a few days... So here it is.. Me VS. a table...

New clothes...

Well I didn't spend over 60 bucks!!! I told my self that it was going to be my day and I was going to find lots of clothes.. So, I go to Old Navy first I didnt pay attention to the line I go straight for the khaki's. I find 2 pairs of khaki's and a cute shirt. I start to walk back towards the dressing room and I look up and its SUPER long.. I start thinking ok, I'm just going to go to NY and CO and put the clothes down and walk away. As I am putting the clothes down James walks up and he says have you seen the check out line? I lookup and the check out line is the length of the store and wrapped around some more. HA YEAH RIHT , I'M NOT STANDING IN THAT! So I went to NY and CO. I was excited when I went in because I started to see lots of cute things. I started grabbing stuff and I had a whole pile to try on. I tried stuff on and ended up only getting 2 pairs of pants and a shirt (which I got all of that for 60 bucks!!! -go me). James and I walked around the rest of the mall some more and went home. The mall was crazy.
Today is my last day until the craziness and the tiredness from the little angles at school sets in! We need to do something fun today!

Shopping

As most of you know last school year I had a blood clot in my lung and I lost a lot of weight.. So...MOST of my work clothes DO NOT FIT! Ha.. So today Jamesers and I are going Shopping... Fun? Ekkk...No so much.. Finding clothes that are long enough for me is a MAJOR challenge... There is maybe one store I can usually find pants long enough but they are very expensive.. So today we are going to have a blast finding me some new work clothes..I just hope I do not go broke!!! We have to wear khaki's with our Monday shirt and khaki's for some reason are the hardest to fit.. Jessica told me to go to old Navy..So I'm off to Old Navy and NY and CO ( where 99% of my clothes are from)... Cant wait!

Oh and my birthday is next Monday!!! We even have it off from work this year!!!! YAY!!!!

I met my kiddos..

Today was meet the teacher and boy was it a crazy day!!!! The pre-k teachers told me I have good kids.. So I'm excited.. Most of my kids were sweet and under control except for one.. I have already spoke to the AP about that one...
I am excited about this year! I am really going to try hard to the best teacher!!!

For now: I'm off to bed.. I'm SOOO TIRED!!!!!!!!!!!

So for some silly reason I forgot how much work it is going back to school. This summer I decided I was going to be the best teacher I can possibly....... So, I have been reading "Growing Reader" and I am going to try and do reading workshop. Also this year all of the Kindergarten curriculum is NEW....So, I am doing EVERYTHING new and with the construction and the PBIS I feel like this is my first year ALL OVER AGAIN! Today I stayed after work until 6:00 to do lesson plans just for the first week (and if u know me i NEVER ever stay after!!!). The 2nd day of school I am starting Writers, and Readers Workshop (I'm brave huh)...

Needless to say Im exhausted and the kids are not even there yet. I did get my class list today I have 18 kids 2 of them I have their siblings last year. I am praying that I have a good class this year, I NEED IT!

School....

I went back to work this week, with no kids tho!! This week has been filled with in service stuff (which isn't so much fun). Our school is still a mess!!!! There is mud and dirt and construction men everywhere!!! I am going to take some pictures tomorrow and post them to show everyone. Also, tomorrow we get our class lists. I am hoping that mine is about 19 kids.. (Yeah, right huh).

The countdown is on until my birthday also.. 11 days and counting!!!

AC works!!

The AC guys came yesterday and fixed the AC.. I guess it was worth $450 bucks.. but it still sucks!!!

This is the last weekend until we go back to work.. :(.. I'm not ready... Plus Catherine wont be back until November 11th :(....

AC broke!! :(

Ok so my AC is BROKE!!!! I called the stupid house people (the warranty people) like a week ago to come look at the AC. They told me my AC is only under warranty for a year. Ok So I bought my house in June of last year and its freaking August cut me some slack- no such luck. The best they could do is pay the serve fee that they AC people charge to come out. So whatever-ill take what I can get. The guy comes out and says the screws on the out side unit are not screwed in right and it was leaking freon. So, he charges it back up with freon and I am thinking it is fixed. WRONG. The next day its hot as heck in my house. So I call them back and they come back out (they were only 5 hours late keep in mind this is my last 2 days of summer!!!). The guy that comes out this time barely speaks English. HELLO ITS AMERICA!!!! UGGGG_He goes up in the attic and tells me I have a leak in the evaporator coil. I AM PISSED!!! My house is only 14 mounts old. So i am talking to him asking him how much its going to cost. Well Im tying to talk to him he doesn't really speak english! At this time my phone rings and its my representative from BEAZER and hes an ass anyways. So I answer and he tells me its broke and its not under BEAZERS warranty but its under the manufactures warranty. Well this part is like $500, then i have to pay for labor!!! So, he tell me with labor its like $1,000 to fix it! I AM SOOOOOO MAD!!!!! So I told him Im going to call around to see if i can get a better price. James parents know this place thats really good so I call them. This is like a mom and pop AC place not a big company. The guy is very nice and I tell him my problem. He tells me well carrier the brad of the AC is horrible and that's why it broke. So any ways. HE is very nice he called Carrier for me and ask him if it was under warranty. He calls me back and it is. I ask him to quote me price of how much just labor is to fix it because its under warranty- $450!!!!!! Its alot cheaper but dang it!!!!!!! A 14 month old house and now I have to spend 450 bucks to fix the AC!!!!!!!
There goes my birthday money! AND I have to spend my last day of summer in a hot house while they are fixing my AC!!!!!!!!!!!!!!!

School

So school is about to start again :(.. I am really not looking forward to going back. I was really starting to enjoy staying at home and relaxing. I guess I have to get back to reality now and go back to work!!!

My birthday is in 19 days!!! Also, in 19 days I get to stop taking my blood thinner!!! This is exciting but also could be dangerous. There is a percentage that I could get another blood clot. I have to go back to the doctor about a week after I am off my medication and have another blood test. This test is to see if my blood is clotting correctly or to fast. If for some reason my blood is clotting to much I will be on blood thinners the rest of my life :(!!!!! So I am praying everything goes to plan once I am off this horrible medication.

Everything else is going great... Well except my AC broke.. YEAH my house is barely a year old an dits broke :(.....

Jamesand I are doing well...Last week was our 6 month anniversary. Wow, I cant believe its been 6 months!!! Its been an awesome 6 months...even on days I felt like garbage!
